refactor: update Pi agent configuration and devShell

- Switch model provider from zai/glm-5.1 to minimax/MiniMax-M2.7
- Add coding rules for Nix language and standard concerns
- Add linting tools (statix, deadnix) to devShell
- Simplify devShell configuration
- Update AGENTS.md project rules
